Mediterranean Chickpea Bowl

This Mediterranean Chickpea Bowl is a vibrant mix of fresh veggies, protein-packed chickpeas, and a tangy dressing. It’s light, filling, and perfect for a wholesome lunch or dinner.


Ingredients

  • 1 can chickpeas (rinsed & drained)
  • 1 cup cooked quinoa or couscous
  • 1 cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • ¼ red onion (sliced thin)
  • ½ cup Kalamata olives (pitted & halved)
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Optional: crumbled feta cheese

Instructions

  1. In a large bowl, combine quinoa/couscous, chickpeas, cucumber, tomatoes, onion, and olives.
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  3. Pour dressing over the salad and toss gently.
  4. Top with feta if desired.
