Grilled Chicken & Quinoa Salad

Light, refreshing, and protein-packed, this Grilled Chicken & Quinoa Salad is perfect for lunch or dinner. It’s balanced with lean protein, whole grains, and fresh veggies.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup quinoa (rinsed)
  • 2 cups water or low-sodium chicken broth
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ¼ red onion (thinly sliced)
  • 2 tbsp olive oil (divided)
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Instructions

  1. Cook quinoa in water or broth until fluffy (about 15 minutes). Let cool slightly.
  2. Season chicken breasts with salt, pepper, oregano, and 1 tbsp olive oil. Grill for 5–6 minutes per side until cooked through. Slice into strips.
  3. In a large bowl, combine quinoa, tomatoes, cucumber, and red onion.
  4. Whisk remaining olive oil with lemon juice, salt, and pepper for a quick dressing.
  5. Toss the salad with the dressing, then top with sliced grilled chicken.
  6. Serve warm or chilled.
